Residents of The Vale Retirement Village welcomed the new season in style at the Springtime Dinner, where blossoms weren’t just found on the terrace — but on the dinner plates and in the joyful spirits of those attending.
The evening’s celebration of Spring brought together the warmth of community with the beauty of seasonal cuisine. The Bar & Bistro was abuzz with laughter and conversation as residents chose from a fresh and flavourful menu featuring dishes like crispy fried squid with nigella seeds, and balsamic-marinated avocado with crumbled feta to start. Mains offered something for everyone — from braised rack of lamb in a rich red wine sauce to pan-seared sea bass in a fragrant dill and coconut cream. Even vegetarians were treated to a spring garden on a plate with gnocchi, green asparagus, and broad beans in a creamy cheese sauce.
Sides dishes like minted garden peas, carrots, and braised red cabbage made the meal feel like a true celebration of the season’s bounty. Dessert rounded out the evening with a touch of elegance — Crepe Suzette and a fresh fruit boat with custard offered a perfect finish.
