World Vegan Day takes place on 1st November and an increasing number of people are opting to go either fully vegan, vegetarian or cut down on the amount of animal- derived products they consume.
Following a vegan diet need not be difficult and the food can be delicious. The Vale is fortunate to have Gordon Gellatly as its in-house chef. Not only is he a whizz in the kitchen, he is also a committed vegan so well able to whip up a delicious vegan spread, as indeed he did a couple of weeks ago for a visiting family.
The tasty menu comprised:
Vegan blue cheese/ beetroot, apple, celeriac & walnut
Faux beef, roast squash, porcini mushroom & spinach ‘Wellington’ served with porcini & thyme sauce
Chocolate fondant with ice cream
Gordon said: “Being vegan and in the catering business, I attend many seminars on the subject and very recently judged a vegan menu cookery competition. This request for a special meal at The Vale was an ideal opportunity to showcase what can produced and that vegan food has very much progressed from the nut roast.”
